I know I am not always the best cook. Hosting can make me nervous when my food is on the menu. The question, “is it going to taste good?” is always my biggest concern. I once heard “if you are not sure it is going to taste good, make sure it looks good.” Making it look good may take an extra few minutes but it is definitely worth the presentation for a good dinner party. One of my favorite presentation dishes is the Hasselback Potatoes. These potatoes are honestly not very different from your average baked potato but your guests will all say “Wow!” once they are on the table. It takes an extra 5 minutes to prepare and is super easy! What you need:
4 Russet Potatoes
1 red Onion
1 clove garlc
A few twigs of Thyme
Salt and Pepper to taste
Olive Oil to drizzle
How to Make- Preheat oven to 425 degrees. Scrub your potatoes and place one on a cutting board between two wooden spoons. Make slices about 1/8th of an inch apart across potato. Do this for all 4 potatoes.
Place in cast iron pan. In pan use onion cut into 6ths and cut off the top of the garlic clove to allow it to bake. Brush everything with olive oil. Add Salt and Pepper to your taste and sprinkle thyme for flavor. (Save sprigs for topping at the end)
Put in oven for 1 hour. Every 20 minutes brush ingredients with more olive oil until done.
Your Hasselback Potatoes are now ready to present as the perfect side to your guests! Enjoy xo- Erin
