When Ian and I first started dating he loved to cook dinners for me after work. He is a master on the grill and loved cooking this spicy grilled pepper dish for me. I find it to be the perfect summer side dish to a good steak or roasted chicken. The spicy Sirachi sauce with the sweetness of the pineapple is delicious! We hope you enjoy-
Pineapple – 1/2 of pineapple cubed
Peppers– 3 (red, orange and green or yellow)
Red Onion– 1 whole cut into 1 inch chunks
Olive Oil– 1/4 cup
Sirachi– as much as you would like to taste- we use about 1 tablespoon
Place all the diced ingredients in a metal bowl. Add oil and sirachi then mix. On preheated grill with a vegetable grill pan add mixed ingredients. Grill for about 15 minutes, until ingredients are soft and a little crispy on the edges. Serve with your favorite main dish- Enjoy!
