Making a quick and easy dinner is really important when you have two little ones running around and a very hungry husband. I like most of my dinners to take under 30 minutes to prepare and an hour to cook. This is one of my favorite quick and easy dishes. You can have this ready in under 30 minutes! It has a little something for everyone and will keep your tribe happy at the dinner table! ENJOY xo
2 Chicken Breasts
1 Can Coconut Milk
2-3 tbps Curry Paste- We prefer Indian but you may use Thai
Sugar Snap Peas (use as much as you need for guests)
1 bunch green onion
Rice for Side Dish
First start your grill. Next get your rice cooking. This will take about 20-30 minutes. I use a rice cooker in our home. It makes cooking rice so easy! We cook rice a lot in our home so having one is very convenient.
In a small serving bowl mix with a spoon your coconut milk and 2-3 tbsp. of red curry paste. Set it aside.
Next cut Chicken Breasts into 1 inch cubes. Put them in a mixing bowl and add half of your prepared curry sauce and mix. (if you have time to plan you can do this hours ahead of time to let the chicken marinate) Place the curry mixed chicken on skewers. A little trick is to soak the skewers in water before putting the chicken on to keep them from burning.
Place the Chicken Skewers on the preheated grill. I like to add some pineapple skewers as an extra side dish on the table. The chicken will take about 15 minutes to cook through.
While the Skewers are cooking it is time to prepare your side dish! I love adding a green vegetable to the table and the sweetness of the sugar snap peas are a perfect compliment to the spice of the curry.
In a pan on medium heat, add some olive oil then the sugar snap peas. I like to allow them to simmer for about 3 minutes then add the chopped green onions. Next stir and then add a lid for about 2-3 more minutes. Now turn off the heat and place this dish in your favorite serving bowl.
Everything should now be ready! Get everything on the table and enjoy a quick, simple beautiful dinner that is full of flavor-
